			<content:encoded><![CDATA[<p>just back from our mission trip to tanzania and we missed the experience so much that we made the meal that we had the most there. it was not the same with the gracious hosts serving us and offering their food to us the way that they did. but we will have those memories with us for a very long time.</p>
<p>i grilled chicken quarters on the grill at 375 degree for 45 minutes while putting on some shrimp on the grill for 4 minutes.</p>
<p>the tomato stew was not exactly what we had in tanzania,&#8230;there must have been an oil or spice that made it magical&#8230;it was also a little sweeter than my first go at it. i&#8217;ll try it again and when i get closer to what i remember, i&#8217;ll put up the recipe.</p>

<p>it maybe my perception, but i think i&#8217;m the only person in the entire united states of america that doesn&#8217;t own a deep fryer. just think of the endless possibilities if one had a machine that was dedicated to frying any food or dessert your heart desired. you could <a href="http://www.faqs.org/photo-dict/photofiles/list/1578/2112fish_and_chips.jpg">fry fish</a>, <a href="http://www.faqs.org/photo-dict/photofiles/list/1578/2112fish_and_chips.jpg">chicken</a>, <a href="http://whats4lunch.files.wordpress.com/2007/12/rivers-edges-dozen-donuts-bakers.jpg">donuts</a>, <a href="http://images.teamsugar.com/files/upl2/1/17470/20_2009/2748afbb2d0fbef9_corndogs.jpg">corn dogs</a>&#8230;mmmm endless&#8230;none of which has the nutritional value that is worth a darn, but hey, we&#8217;re talking fried american goodness so all that nutritional mumbo jumbo goes out the window.</p>
<p>even against all odds and without a fryer handy, i decided to put my hot oil wok skills to the test. ladies and gentlemen, i give you my attempt at an all american burger, fries and onion rings.</p>
<p>enjoy.</p>
<p><span style="background-color: white;"><strong>Recipe for hamburger</strong></span><br />
<span style="background-color: white;"><br />
</span><br />
<span style="background-color: white;"><span style="text-decoration: underline;">ingredients:</span></span><br />
<span style="background-color: white;">lean hamburger meat</span><br />
<span style="background-color: white;">minced garlic</span><br />
<span style="background-color: white;">finely chopped onions</span><br />
<span style="background-color: white;">a little of worchestershire sauce </span><br />
<span style="background-color: white;">salt and pepper</span><br />
<span style="background-color: white;"><br />
</span><br />
<span style="background-color: white;">mix the meat together and refrigerate for at least 1 hour prior to grilling. i grill them on first side around 4 min at 400 F then flip, another 4 min for the second side. this gives me a medium done hamburger. toast the bun, then add your condiments like mayonaise and mustard and vegetables like tomato and lettuce and pickles. i had some jalapeno slices that i wanted to add too, just for kicks.</span></p>
<p><strong>Recipe for onion rings</strong></p>
<p><span style="text-decoration: underline;">ingredients:</span><br />
milk to give it some wetness</p>
<p>for the batter<br />
mix salt and pepper (i used white pepper, because i find it more intense in fried foods) with flour</p>
<p>i used white onions, but yellow onions would work as well..maybe better because they are sweeter..hey..that gives me an idea for next time. onions are slice opposite of traditional cuts, so they are cut against the grain. if you were to hold the ends of the onion like a globe the north and south pole in position, you would cut down the middle like the equator (hope that wasn&#8217;t too confusing). keep on cutting this way to get the thickness you are looking for and push out the rings inside.</p>
<p>dip in milk</p>
<div style="margin: 0px;">immediately dust with salt/pepper and flour mixture and get a good even coating of the flour.</div>
<div style="margin: 0px;">get your hot oil wok as hot as your stove can get it. mine was probably around 450 F. i also used the rest of my canola oil, although i prefer to use peanut oil, i just ran out.</div>
<div style="margin: 0px;">cook until it&#8217;s beautifully golden brown on both sides. cooking in a hot oil wok also has the disadvantage of keeping the oil from spattering all over you, if you have a splatter shield, now&#8217;s a good time to put it to use.</div>
<div style="margin: 0px;"><strong>Recipe for french fries</strong></div>
<div style="margin: 0px;">if you want to best, crispiest french fries that isn&#8217;t from a fast food restaurant, this is your way to do it. actually, it is anthony bourdain&#8217;s way of doing it at his much respected <a href="http://leshalles.net/brasserie/">les halles</a>. i&#8217;ve yet to be able to go there, but one NYC trip, heather and i will be there.</div>
<div style="margin: 0px;"><span style="color: #333333; font-family: 'Trebuchet MS', Verdana, sans-serif; font-size: small; line-height: 19px;"> </span></div>
<div style="margin-bottom: 10px; margin-top: 10px; text-align: left;"><span style="text-decoration: underline;">ingredients:</span><br />
4 idaho potatoes<br />
2 cups of canola oil, i would use more, but like i said, i ran out. i had a low level oil working ,but it probably kept the oil splattering to a minimum.</div>
<div style="margin-bottom: 10px; margin-top: 10px; text-align: left;">table salt</div>
<div style="margin-bottom: 10px; margin-top: 10px; text-align: left;">prep:  fill a large bowl with ice water.  peel the potatoes and cut them into 1/2-inch/1-cm-thick sticks.  put them immediately into the bowl of ice water to keep them from oxidizing.  leave them in the water anywhere from 30 minutes to overnight, then rinse well in cold water to take out much of the starch.</div>
<div style="margin-bottom: 10px; margin-top: 10px; text-align: left;"><span style="color: #333333; line-height: 19px;"><span style="font-family: Times, 'Times New Roman', serif;">blanch: in my wok i attempted to heat the oil to around 300˚F.  cook the potatoes in batches, about 6 to 8 minutes for each batch, until they are soft and their color has paled from opaque white to almost translucent white. remove them from the oil with a skimmer or wire basket and spread evenly on a baking sheet.  let them rest at least 15 minutes.</span></span></div>
<div style="color: #333333; font-family: 'Trebuchet MS', Verdana, sans-serif; font-size: small; line-height: 19px; margin-bottom: 10px; margin-top: 10px; text-align: left;"><span style="font-family: Times, 'Times New Roman', serif;"><span class="&lt;br /&gt; an" style="font-size: medium;">fry: bring the oil up to 375˚F.  no hotter, no cooler.  fry the blanched potatoes in batches for 2 to 3 minutes each, or until they are crispy and golden brown.  remove from the oil with the skimmer or wire basket, shake off the excess oil/</span></span></div>
<div style="color: #333333; font-family: 'Trebuchet MS', Verdana, sans-serif; font-size: small; line-height: 19px; margin-bottom: 10px; margin-top: 10px; text-align: left;"><span style="font-family: Times, 'Times New Roman', serif;"><span style="font-size: medium;">serve: immediately drop the fries into another large bowl, which has been lined with a clean, dry lint-free towel.  add salt to taste and whip out the towel.  toss the fries around in the bowl and serve while still hot.</span></span></div>

			<content:encoded><![CDATA[<p>when i was in elementary school all my friends were playing basketball on saturday leagues. by the time they were in 7th grade, they could do basic basketball drills like the figure 8 with ease and make it onto the 7th grade squad. i tried out and couldn&#8217;t even make it onto the 3rd string roster, i blame my lack of basketball drill skills, that and the fact i couldn&#8217;t dribble the ball more than twice.</p>
<p>in high school, the kids were into <a href="http://www.nypost.com/p/entertainment/tv/they_re_back_PZVN8lcKHQYVIYx3xAJRtM">beavis and butthead</a> and <a href="http://www.jcrew.com/">j.crew</a> clothing. i was still watching <a href="http://www.youtube.com/watch?v=GJ-ckU_D1fg">g.i.joe</a> (don&#8217;t ask, the options were limited back then) and wearing gap.</p>
<p>well, i was just told that the <a href="http://www.foodnetwork.com/">food network</a> has a t.v. show that was all about <a href="http://www.foodnetwork.com/the-great-food-truck-race/index.html">food truck&#8217;s</a> with <a href="http://www.foodnetwork.com/tylers-ultimate/index.html">tyler florence</a> (my second man-crush after <a href="http://www.travelchannel.com/TV_Shows/Anthony_Bourdain">anthony bourdain</a>) and they apparently were in fort worth. IN FORT WORTH, as in the town i love and live in!</p>
<p>maybe i&#8217;m not going to be late for this <a href="http://www.msnbc.msn.com/id/37400996/">party</a>. i&#8217;ve been working on perfecting some recipes&#8230;that maybe  food truck worthy..whatever that means. food trucks are nothing more than street vendor foods (with exception to the gourmet types of food trucks). therein lies the fascination for me, i can live off of street vendor foods. there&#8217;s something so pure in taking your pick of delicious bites from food stand to food stand and taking breaks to soak in the atmosphere and then picking up where you left off with more food stands.</p>
<p>of course i naturally think of taiwan when i think of street food. and more to come on that&#8230;</p>

<div>for some of you, the  thought of a gelatinous  shellfish paired with slimy slivers of vermicelli in a corn starchy broth would not appeal to you in the least. it&#8217;s a sort of comfort food as it&#8217;s always served piping hot (i&#8217;ve burned my tongue every time) bowl with small bits of bamboo, garlic. the more adventurous order this with oysters and pig intestine. don&#8217;t let the words pig _______ (blank) scare you off. it&#8217;s all from that delicious animal so it&#8217;s gonna tastes heavenly.</div>
